We felt like seafood so I decided to buy some
prawns. No fresh ones were available so
I bought ones that had been frozen (deveined and shelled). They took about a day to defrost in the
fridge (our fridge is set quite cold).
Ingredients:
Bag of prawns
Pepper and salt
1 chilli finely sliced
1 courgette (zucchini) sliced
½ pack of spinach
Some basil leaves
Oil for stir frying
Chilli bean paste
Chinese cooking wine (or sherry)
Soy sauce
Fish sauce
Cornflour (corn-starch)
1 tsp sesame oil
1 tsp sugar
Method
Season your defrosted prawns (after patting dry) with
salt and pepper and let them sit for about 10 minutes.
Lightly dust the prawns with cornflour.
Stir fry the prawn (doesn't take long if you have the
oil nice and hot). Take the prawns out
and set aside.
Stir fry the courgette and after about 3 minutes add
the spinach, chilli and basil – which will cook in less than a minute.
Add a dessert spoon or so of chilli bean paste, a
splash of soy sauce, a couple of spoonfuls of fish sauce, the sesame oil, sugar
and Chinese cooking wine.
Add back your cooked prawns and heat through for about
30 seconds and you are done.
Serve with rice.
It's not too much work and you end up with a lovely
Chinese tasting dish.
