Bombay Potatoes

Carole's Chatter: Bombay Potatoes

This quick spicy dish relies on Indian flavours.  To do Bombay Potatoes you will need some cooked potatoes.

Fry off some mustard seeds, cumin seeds, paprika, turmeric and chilli for 10 seconds in a teensy bit of vegetable oil.  Add your potatoes and salt and mix it all together.

Then add 100mls of water and 2 diced tomatoes.  Simmer on a low heat for 10 minutes and it's ready.
