I like eggplant, but I don't use it nearly often enough. One of my favorite ways to prepare it is Baba Ghanoush.

ReplyDeleteI rely should make eggplant more often! Had to go way back in the archives for my ratatouille with local veggies. I did just make cheesy polenta with garlic stewed eggplant and tomatoes. Will have to make it again and post it! Happy Friday!

ReplyDeleteIf I'm not stuffing it into spaghetti sauce (my kids will say "this sauce needs more eggplant") it appears that I really prefer to eat my eggplant with my fingers--I'm linking up 2 appetizers and a pizza that I've made using our farm share eggplant.

This stuffed eggplant is something else!!! The stuffing recipe I had to change a bit since I had no crab, but it was still wonderful.

ReplyDeleteEggplant is a real hit and miss veg for me too - sometimes I love it, sometimes I'm like, meh! I've linked two if my favourite recipes, my Mediterranean Eggplant and Barley Salad and my Greek-Style Grilled Eggplant with Olive Oil, Garlic, Parsley and Feta. Because if anybody knows what to do with an eggplant, the gorgeous Greeks do.
