I
am always trying to find new ways to use Brussels Sprouts. In this Shaved
Brussel Sprout Salad they are used raw – which has to be good for you,
right? And I think that most people
wouldn't even realise they were eating them but would think it was a sort of
coleslaw.
This
is how I did it. I took the stalk and
outside leaf off each sprout and then sliced it finely. I did mine by hand.
I
added some lightly cooked onion and garlic – not too much and also added the
olive oil it was cooked in.
Then
I added ¼ of a diced red capsicum (bell pepper).
Then
salt and pepper to taste.
A
splash of apple cider vinegar and a small amount of mayo and it was done.
This is news....I have never even heard of eating Brussel sprouts raw. I need to try one before trying this out.

Thank you. Brussel sprouts is my husbands favorite vegetable. Lord knows I've tried a zillion different ways to make it over the years - but - never raw or in a salad. I can't wait to try it.
