My favourite root vegetable! I've posted a recipe from Nepal. Alu Dum is a dry preparation of potatoes - in this case baby potatoes - and the main ingredient in this dish besides the potatoes is red chilli paste. The more the merrier, but to cut down on the heat, I used red pepper paste and very little red chilli paste.
