Here it is Wednesday again.  Time for Part II of Need Some Inspiration?  Try Avocado

First, here are some Avocado Cornmeal Muffins by Bizzy Bakes.

What a creative way to use avocado.

Next, here is a Mayo Free Avocado Macaroni Salad by Our House Story.

This looks great – despite the lack of mayo!

And how about this Red Quinoa and Avocado Salad by Tastefully Julie?

I haven't been brave enough to experiment with quinoa – I can't even say it properly but this picture is a real incentive!

And for something completely different, have a peep at this Sweet Avocado Pie by Jenny Eatwell's Rhubarb and Ginger.

 Way to go, Jenny!

Now here's a really fancy use of avocado,Shawna's Blue Crab Galantine with Avocado and Confetti Vinaigrette.

I'm not sure I'm up to that task but it looks just lovely.

Finally for this showcase here is a scrumptious looking Bacon and Avocado Pizza by Countrified Family.

I have also  made up a Pinboard with the links for Food on Friday: Avocado.  This is the link.

Have a good week.

  4. I love the creamy goodness of avocados and I usually cut it open, pop the seed out, and eat it straight out of it's skin. I'd love to know how the pie tastes but the pizza sounds really delicious.
