I have done
scalloped
potatoes and sweet potatoes but haven’t ever thought of using the same
technique for tomatoes. Apologies to
whoever it was I got this idea from, because I can't remember.
Ingredients:
Tomatoes
Olive Oil
Grated
Cheese
Breadcrumbs
Salt/pepper/cayenne
pepper
Knobs of
butter
Method:
While your
oven is heating, peel your tomatoes. I
did this by boiling some water, making a little x at the top of each
tomato. You pour the boiling water over
them for just a moment or two and the skins practically detach themselves.
Slice your
tomatoes.
Put layers
of tomato (plus seasoning) and cheese until you've filled your greased pie
plate.
Finish with
a layer of cheese, then breadcrumbs topped with a knob or 2 of butter.
This only
needs about 15 minutes in a moderate oven.
A nice side dish.

ReplyDeleteI think this dish was popular in the 19th century, sometimes is listed as a Southern classic, and looks worth having back now!
