Today I give you Baked
Tomatoes with Sausage. The amount of
spiciness will depend entirely on the sort of sausage you use.
Ingredients:
4 large tomatoes
3 sausages (pork with honey and mustard)
¼ chorizo
¼ cup breadcrumbs
¼ cup chopped parsley
1 tblspoon lemon zest
1 tsp lemon juice
½ cup grated parmesan
1 tsp oil
Some parsley for garnish
Method:
Heat your oven up to a moderate heat (170C) and while
it is heating prepare your tomatoes.
You cut the top off and then scoop out the pulp and
seeds in the middle. I used a little
spoon to do this. Turn the tomatoes
upside down onto some paper towel to drain while you prepare the stuffing.
In a large bowl mix the sausage meat (you have to take
it out of its skin) with the
breadcrumbs, parsley, lemon zest and juice and ½ of your parmesan. When it is combined spoon it into your
tomatoes. I pressed the mixture down a
bit with a spoon to make sure each tomato was full.
Sprinkle the rest of your parmesan over the top.
Bake in the oven for 20 minutes. Serve hot with a sprinkling of parsley as a
garnish.
I've eaten stuffed peppers many, many times, but I've never had (or even known about) stuffed tomatoes. Thank you.

I've tried this. But I skipped the part where you drain them upside down on paper towels. I need to do that because mine were too juicy! Good tip :)
