I found some Chicken Tenders on sale – they were a real
bargain so I decided to make up a dish using them. It turned out to be Lemon Chicken with a hint of Curry – and I can recommend it to you.
Get your oven quite hot.
Mix the following up and then sprinkle it onto the
tenders.
½ tsp paprika
½ tsp salt
½ tsp pepper
Then dip each tender into 2 beaten eggs and then into
some well seasoned breadcrumbs.
Bake your tenders for about 15 minutes (more if you are
using other chicken cuts) – turn the tenders over once in the middle.
While they are cooking, make your sauce – heat the
following and stir until it is nice and sauce like:
½ cup sugar
½ cup lemon juice
Splosh of limoncello (optional obviously)
2tsp curry powder (less if you want just the merest
hint of curry)
Pour it over the chicken and bake for 5 more minutes (I
turned the oven off and just let the residual heat do its work).
My favorite meat is chicken, and I love curry, so I'll be trying this!
