Lemon Chicken Tenders with a hint of Curry

Carole's Chatter: Lemon Chicken Tenders with a hint of Curry

I found some Chicken Tenders on sale – they were a real bargain so I decided to make up a dish using them.  It turned out to be Lemon Chicken with a hint of Curry – and I can recommend it to you.

Get your oven quite hot.

Mix the following up and then sprinkle it onto the tenders.

½ tsp paprika
½ tsp salt
½ tsp pepper

Then dip each tender into 2 beaten eggs and then into some well seasoned breadcrumbs.

Bake your tenders for about 15 minutes (more if you are using other chicken cuts) – turn the tenders over once in the middle.

While they are cooking, make your sauce – heat the following and stir until it is nice and sauce like:

½ cup sugar
½ cup lemon juice
Splosh of limoncello (optional obviously)
2tsp curry powder (less if you want just the merest hint of curry)

Pour it over the chicken and bake for 5 more minutes (I turned the oven off and just let the residual heat do its work).

  1. My favorite meat is chicken, and I love curry, so I'll be trying this!

  2. Yum - I bookmarked this one...sounds like something nice and easy for a weeknight and I love hints of curry!

  3. We at a lot of chicken and this looks different and tasty. The sauce sounds wonderful! Definitely pinning this for later.

  4. My family would love this... with limoncello and curry... yum!

  5. You and I are chicken eaters this week! Like your version here.

  6. Love idea of limoncello in the sauce. Yum.

  7. Great idea to use the limoncello in cooking! I tried a new brand, just as expensive as the first one I tried and loved, but I don't like the new one and now have a whole bottle of it to use up!

  8. My husband might like the hint of curry, thanks for the idea

    Happy cooking!
