I
had Swedish Meatballs at Ikea once –
and wasn't that impressed. But I decided
to try to make my own. And they turned out well – although different.
The
ingredients:
500g
minced pork
1
egg
2
½ tablesp of finely chopped onion
½
cup breadcrumbs
2
cold boiled potatoes
Salt,
white pepper and allspice (I used mace because I didn't have any allspice)
I
cooked the onion until it was soft. Then
while it was cooling, I popped the potatoes into a bowl and mashed them, added
the egg and the moistened breadcrumbs and the meat. Then the seasoning. And then the onions.
After
mixing it up with my trusty wooden spoon I formed it into smallish roundish
balls by rolling them on a floured board.
I managed to get the sizes relatively even by using an ice cream scoop
and then dividing that amount in 2 by eye.
Fry
the meatballs gently in butter – with a touch of oil as well to stop the butter
burning.
I
kept the meatballs warm in a low oven (which also meant I could be sure they
were properly cooked through).
I
didn't serve them with the Ikea style gravy but with an artisanal spicy tomato
and smoked chipotle sauce that we had just bought.
I
liked the texture of these meatballs and will be adding potato to my meatballs
in future. It lightened them up quite a
bit.
