In her chapter on salad greens Stephanie Alexander gives a list of what can be in what she calls "composed salads" – what she means is that you have a base (salad leaves, green beans, lentils or white beans), then add some crunch and then a substantial focus such as a protein, cheese or vegetable. And then of course a dressing.
Composed salads can include:
Anchovies |
Artichokes |
Asparagus |
Beetroots |
Broccoli |
Capers |
Carrots |
Cheese |
Chestnuts |
Chick peas |
Dried beans |
Eggplants (aubergine) |
Eggs |
Garlic |
Grapes |
Green beans |
Ham |
Herbs |
Meatballs |
Onions |
Pears |
Potatoes |
Poultry |
Prawns |
Pumpkins |
Quail |
Salted herrings |
Sausages |
Smoked fish |
Squid |
Sweet peppers |
walnuts |
Now I wouldn't put in grapes or pears myself – but then I'm biased about fruit in savoury salads.
Her list of salad garnishes:
Almonds |
Bacon |
Croutons |
Grilled polenta |
Olives |
Pine nuts |
Toasted sesame seeds |
Walnuts |
And things that you can find in salad dressings:
Anchovies |
Browned butter |
Capers |
Citrus juices |
Crushed spices |
Hazelnut oil |
Herbs |
Mayonnaise |
Mustard |
Olive oil |
Pickles |
Roasting juices |
Sour cream |
Wine vinegar |
So, as always, just pop in your name plus a recipe title into the first Mr Linky box and paste in the url for your recipe into the second one. Enjoy!

ReplyDeleteHi Carole,
ReplyDeleteHere is the link for the LinkWithin widget. There are directions for how to add it to your blog. It is pretty simple! http://www.linkwithin.com/learn
As for the photos on my link party, I use Inlinkz. http://www.inlinkz.com/ The first party with photos is free but after that it is $19.99 per year. Or you can have unlimited free parties without the photos, just links. I figured less than $2.00 per month was an ok amount to pay to keep the photo links in the parties. Other bloggers seem to like it and I love being able to see the photos of what people share!
Hope this helps.
Julie

Composed salad definition? I'm a 3 time Le Cordon Bleu Presidents Achievement Award winner and a 3 star and 4 star Michelin rated chef de cuisine. The theme is the most important part of a great composed salad! Here is a prime example that I posted.
