Slater gave me the idea for using blue cheese as the base for a pasta sauce and
I had one leftover burger pattie (pork & fennel), so a new dish was born – Leftover burger & blue cheese pasta –
not a particularly inventive name for the dish but at least it is descriptive.
Ingredients:
1 leftover
burger pattie, sliced (or you could use leftover sausage)
Small
amount of olive oil
½ a wedge
of strong blue cheese
½ a pottle
of sour cream
Salt and
pepper (watch the salt – if the blue cheese is very salty you may not need to
add any)
Handful of
cherry tomatoes, quartered
½ red
chilli, finely diced for garnish
Pasta of
your choice – I used penne
Cook your
pasta while at the same time heating up your leftovers in a little oil, when it
is just heating, add your blue cheese in chunks and your crème fraiche.
5 minutes
before your pasta is ready add your tomatoes and your pepper (and salt if
needed).
Drain your
pasta into a bowl, pour your sauce on top and then sprinkle on the chilli bits.
Very tasty
indeed.
