Stuffed Apricots


Carole's Chatter: Stuffed Apricots


If you have a sweet tooth these Stuffed Apricots are for you. Next time I make them I'll add a bit of chilli and use a saltier cheese.

Ingredients:

Bacon
Dried apricots
Cheese – mozzarella
Maple syrup
Black pepper
Toothpicks

Method:

Heat up your oven to hot.

While it is heating, put a little cheese between 2 dried apricots.  Wrap an uncooked rasher of bacon round the lot and secure with a toothpick.

Place each one onto baking paper in a baking dish.

Put some maple syrup and black pepper together and then brush half of it over the bacon.

Cook for 10 minutes and then brush over the rest of the maple syrup mixture.  10 more minutes and you are done.

  2. Ooooo....never thought about apricots. I've done the same with dates, stuffed and wrapped with bacon.
