Salt & Vinegar Potatoes


Carole's Chatter: Salt & Vinegar Potatoes


This is an easy way to get scrumptious crispy and soft potatoes.  Next time I'll use a stronger vinegar.

Ingredients:

Baby potatoes
Olive oil
Rice vinegar (2 ½ teaspoons)
Salt

Method:

Pre-heat your oven to hot – in my case about 200C

Steam your potatoes – no peeling first.  Mine took about 10 minutes in my microwave steamer.

Put a baking dish into the oven with oil in it.  I used a good amount of ordinary olive oil.

Let the steamed potatoes sit on a plate for a couple of minutes and pat dry.

Squash each potato with a fork.

Put the potatoes into the hot oil.  Cook for 30 minutes, turning them once or twice.

Lift the potatoes out onto a serving plate.  Sprinkle with salt – amount to your taste and then drizzle them with the vinegar.  Next time I'm going to use malt vinegar and 1 tablespoon of it.  While my better half could detect the vinegar it was much too subtle for me.
