Tuna stuffed kamo kamo


Carole's Chatter: Tuna Stuffed Kamo Kamo


So what is a kamo kamo, I hear you asking?  This is a New Zealand vegetable – it's a type of squash – think a large zucchini but more robust and nutty tasting.  It is also known is kumi kumi.

To prepare the kamo kamo for stuffing just halve it longways and scoop out the seeds.

Stuffing ingredients:

Canned tuna (drained)
Cherry tomatoes
Chopped spinach
Mayo
Olive oil
Salt and pepper

Topping – grated cheese

Just pop the stuffing into the kamo kamo, top with grated cheese and roast in a moderate oven for about the same time as a potato would take.

Very nice for lunch.

  1. This sounds yum! A kamo kamo looks a little like a marrow, maybe I could try this using one of those instead.
