I had a range of vegetables so I thought I'd experiment
with baking them all together with a bit of cheese and cream. It worked out well in taste but was a tad
dry. Next time I'll slice the mushrooms
instead of quartering them.
Ingredients:
Potato
Kumara (sweet potato)
½ small shallot
Yam
Brussel sprouts
Mushrooms – Portobello brown
Cheese chunks (grated would be better)
Parmesan cheese
¼ small can of reduced cream
Salt, pepper, cayenne pepper
Oil
Method:
I oiled the glass baking dish and then dusted it with
salt and pepper.
The first layer was made up of slices of potato and
kumara
Then a sprinkling of sliced shallot
Another dusting of salt and pepper
Then a layer of sliced Brussel sprouts and quartered
mushrooms
Another layer of seasoning followed by some cheese
chunks and some grated Parmesan. Finally
I spooned on the reduced cream (if you are trying this I suggest you use heavy
cream or reduced cream diluted with water)
Bake in a moderate to hot oven until the potato is fork
tender. In my case this took about 40
minutes.
Such a lovely medley of vegetables. It sounds rich and delicious.

ReplyDeleteThat sounds good, I wonder if a bit of broth in the baking dish would have made a difference in dryness that you mentioned. I'd eat it either way.
