Chicken with Peas



Carole's Chatter: Chicken with peas


Chicken with Peas turned out a bit bland for my taste but I thought I would tell you about it because it may suit your palate.

Ingredients:

Chicken thighs
Prosciutto
Coconut cream – 3 tblsps
Frozen peas – good handful
Garlic oil
Chicken stock
Lemon juice

Method:

Cut up the chicken into bite sized chunks
Chop up your prosciutto

Fry the prosciutto in your oil.  If you don't have garlic oil you could use any other oil and add some finely chopped garlic.

Set the prosciutto aside and then fry the chicken in the oil until both sides have browned a bit.

Add you chicken stock (I used a cube plus hot water) and put the prosciutto back in and simmer for 15 minutes.

Add the peas and cook for another 4 minutes

Add a squeeze of lemon juice to brighten it up and then stir in your coconut cream just before serving.
