Here's a simple idea for
jazzing up zucchini– you might call it courgette! The key is to slice
the courgette most of the way to the stalk and then press it down quite hard
with the flat of your palm so it forms a fan shape.
Then simply season it with
salt and pepper. Sprinkle on paprika and parmesan cheese. A good
drizzle of olive oil and you're ready to go.
Pop it into the oven on a
high heat for about 15 to 20 minutes – or, as the cookbooks say, until golden
brown.
These tasted
just fine but I think that if I had used smaller courgettes the fan would have
worked better.
We love zucchini and this is one way I have not fixed it.

ReplyDeleteZucchini (we call them courgettes) in short supply here in England. Most are imported from Spain and Portugal, but this year the harvest has been very poor.
ReplyDeleteI love the way these look. I bet I could grill them. Our zucchini's are also imported now -- I buy them, but can't wait for the fresh ones from the summer farmers' market.
