I'll leave
you to decide whether this was a frittata or a sort of savoury rice pudding. I had a couple of cups of cooked rice left
over and didn't feel like doing an egg fried rice so I made a dish a bit like a
frittata – but it didn't set anywhere near as much as a frittata would.
I oiled a
lasagne dish with a mixture of mustard and canola oil. I popped the rice plus a small amount of
cooked diced pork into the dish along with a quarter of a chopped orange
capsicum (bell pepper). I included a
handful of grated pizza cheese and stirred this lot up.
In a
separate boil I whisked together 5 eggs (the number I had) and roughly 5 tablespoons
full of cream liberally seasoned with ground white pepper.
I poured
the egg mixture over the rice etc and then pushed some halved cherry tomatoes
on top so they would look nice.
I cooked
this in the oven on a low temperature in a bath of hot water for about an
hour. But it still didn't really set
although the egg tasted cooked.
Maybe too
much cream? Or the absorbing nature of
the rice affected it? Anyhow it tasted
ok – although I did have to add salt.
