Roast Chicken Thighs with lemon juice & ginger



Carole's Chatter: Roast Chicken Thighs with lemon juice & ginger


I didn't have a lot of stuff in the fridge so I made up this dish with what I had:

4 chicken thighs
Juice and zest of a lemon
1 hot red chilli (chopped)
Large knob of fresh ginger (grated)
Tops of spring onions (scallions) – chopped
3 tablespoons of honey
Salt

If you can eat or have garlic, some garlic and lemongrass would be good added to this marinade.

Slash the chicken and then mix the chicken and the marinade and leave it to marinate in the fridge for at least 2 hours.

Roast the chicken in a moderate oven along with some tinned pineapple pieces.
