Pork Pita Pockets

Carole's Chatter: Pork Pita Pockets


Life lately has meant that I have had to cook only relatively quick and simple dishes.  This is one of those.  It was tasty but on reflection I might have preferred the end result in a burger bun rather than a pita pocket.

Ingredients:

Minced pork
1 egg
Some breadcrumbs
Some dried fried shallots (optional)
Pita Bread
Gherkins
Ripe tomato
Lettuce – I used good old iceberg
Salt and Pepper
For the sauce – a mix of Peri Peri Mayo (very hot), mustard and tomato sauce.

I mixed the pork with the breadcrumbs, egg, shallot and salt and pepper – don't overmix.  I formed the mixture into small flattish patties.

Fry your patties off in a frying pan until cooked and brown.

Put some shredded lettuce into each pita pocket with some of the sauce, add sliced tomato and gherkin then pop a couple of your pork patties in as well and add more sauce.

Quick and simple but certainly not gourmet!
