The
combination of tuna, avocado and potato worked well in this salad. All I did was mix a bunch of ingredients
together with a dressing.
Ingredients in the salad:
Can of tuna
(drained)
Some chunks
of cooked potato (leftovers)
Capers
& gherkins – roughly chopped
Small bit
of chopped fresh red chilli
5 green
olives (chopped) – use more if you like them
1/3 small
cucumber chopped
The green
part of a spring onion (scallion) chopped
1/3 of a
courgette (zucchini) – chopped raw
An avocado
– spoon curled into the salad with a teaspoon
Ingredients
in the Dressing:
Crème
fraiche/mayonnaise/lemon juice
Horseradish
sauce – 1 teaspoon or more if you like it spicy
Sherry
vinegar – just a splash
Herbs –
dill, parsley, thyme and basil – chopped
Salt and
white pepper
I reserved
a few thyme flowers and a bit of chilli to use as garnish.
