BBQ Pork Belly

This Barbecue Pork Belly sure isn't diet food but the combination of flavours was just great.
First I cut up the pork belly into strips with a sharp knife.  The skin had already been removed.  But if yours has skin on then you will have a bit of a mission removing it.  Sometimes it helps to gently warm the meat for a few minutes in the oven.
Then you put the following things into a small saucepan:

¼ cup each of marmalade, sweet chilli sauce,  and runny honey
½ cup of pineapple juice
4 tablespoons of lemon juice
3 tablespoons of sweet soy sauce (kecap manis)
A knob of ginger, freshly grated
2-3 cloves of garlic, grated finely on your microplane 

Simmer this sauce until it thickens – say 5 to 10 minutes.  Let the sauce cool and then pour it over your pork belly and marinade overnight in the fridge.
Drain the pork and grill it on a hottish grill until cooked and the outside is golden and crispy.  While it is cooking brush it with the marinade occasionally.
