Avocado Tomato Chilli Salad

Today's offering is a simple but colourful salad - Avocado Tomato Chilli Salad.
Just mix halved cherry tomatoes, cubed avocado and ½ a chilli together.  Don't forget to squeeze a bit of lemon juice onto your avocado as soon as you have cut it.  When I cube avocado I halve it, then take out the stone by hitting it firmly with a heavy knife and then twisting it out.

I then score the avocado down to the skin by horizontal and vertical lines.  Then just push it inside out from the skin side and your cubes of avocado should just pop out.

The dressing was a simple one – lemon juice, olive oil, salt and pepper and then for just a little something special – a hint of vanilla essence – you don't exactly taste it but it does add something.
