These
beef & bacon burgers turned out
to be a minor triumph. I'll certainly be
doing them again. So much better than
the bought alternatives, in my opinion, anyway.
Patties
Mix
your beef mince (ground beef) with mustard powder, grated cheese, tomato paste,
salt & pepper, breadcrumbs, an egg, a touch of cayenne pepper and a shake
of crispy fried onions.
Form
into patties with slightly moist hands.
I wore gloves because I was going to prepare the fillings next and
didn't want them contaminated with raw meat.
Store the patties, covered, in the fridge.
For
the fillings, I did a small plate
with a few cabbage leaf pieces (a substitute for the lettuce I didn't have),
thinly sliced red onion, tomato slices and some pickled cucumber slices (store
bought – haven't tackled pickling yet).
I
prepared 2 sauces. The tomatoey sauce was a mix of chipotle
and tomato sauce, ketchup and chilli sauce.
The
mustardy sauce was a mixture of
mayonnaise (bought not made) and Hot English Mustard.
Everything
up to here can be done well in advance.
When dinner time approaches, you just lightly fry slices of bacon (not
too much otherwise they will go over crispy in the oven). Put the bacon into a moderate oven and then
fry the patties in groups in the bacon fat.
Just get them a nice colour on each side and then put them in the oven
with the bacon to finish cooking (about 15 minutes max).
The
final element are the hamburger buns, which I just buttered and then fried in
the same pan (not wiped out) on the buttered side only until slightly golden
round the edges.
Then
on to the table for each person to assemble their own. As you can see because I chose to have 2
patties with bacon in between the burger was really too big to bite into so I
ate it as an open sandwich. Yum.
Be still, my heart! That looks so very GOOD!!!! Bet it smelled heavenly!
