As
an additional quick side dish, I created this marinated mushroom salad.
All it is, is a handful of white button mushrooms (stalk removed) and
sliced very thinly. I then sploshed white wine vinegar, salt and pepper and
extra virgin olive oil over the mushrooms, gave it a good stir and let the
flavours meld. I later added a little
finely diced radish and courgette (zucchini) left over from a salad plate just
for colour. It tasted good – and is a
good way to do mushrooms without cooking them.
No-cook sides are a great asset in August. Thanks for this recipe!

ReplyDeleteMushrooms are one of my favorite vegetables. I'm even growing some myself from a kit I bought at a farmer's market. The next batch will be ready in a few days.

ReplyDeleteI could eat this as a side at every meal. Love a mushroom. I also like baking the fat ones with some Camembert and garlic stuffed in them. Mmmmmmmmmm...thanks for inspiring.
