Food on Friday: Duck and other Game Birds


ON


Food on Friday this time is a bit more exotic.  It is about duck dishes – or dishes with other game birds like pheasant, pigeon, quail etc.

According to Stephanie Alexander these things go well with game birds and with duck:

Garlic
Honey
Olives
Oranges
Soy sauce
Star anise
Walnuts



I was surprised that there weren't more common ingredients!

In addition to the common ones, duck goes well with:

Carrots
Celery
Cherries
Cumquats
Curry paste
Eggplants
Hoisin sauce
Limes
Pistachios
Red cabbage
Salad leaves
Salt
Spring onions (green onions)
Turnips


And the extra ingredients that go well with game birds are:

Bacon
Barley
Bay leaves
Cabbage
Caramelised onions
Cardamom
Chestnuts
Coriander seeds (cilantro)
Couscous
Cracked wheat
Cumin
Fortified wines
Ginger
Juniper berries
Lemons
Lentils
Mushrooms
Olive oil
Pancetta
Pickled plums
Pickled quinces
Pine nuts
Polenta
Potatoes
Poultry livers
Relishes
Rice
Rosemary
Shallots
Spinach

Personally, I would think most of that list would go just fine with duck, too!

  11. I love duck but I always buy it when I go out. The last time we made it was for Christmas lunch. Apparently one duck is NOT enough for 5 people.
