A Christmas Favourite from Downunder: Mango Cocktails



Since this week's Food on Friday has the theme of Christmas Favourites, I decided to do a festive Mango Cocktail.  If it doesn't feel Christmassy to you, just remember that where I live Christmas falls in high summer so tropical fruit is appropriate.

This lovely smooth cocktail is simple to make:

Instead of putting ice in it I just refrigerated all the ingredients overnight so they were nice and cool

For 4 serves just blend together:
180ml white rum (or less if you prefer less of a kick)
1 teaspoon or a bit more of lemon juice
425g can of mango pieces in juice
250ml of milk
2 tablespoons of caster sugar – I used ½ teaspoon of stevia powder instead

Pour into your festive glasses and enjoy.

  8. Sounds delicious no matter whether it's hot or cold! Just for grins, I hope that one day I can spend the holidays in the southern hemisphere just for a change and to observe the different culture of that season. I'm sure it would be quite interesting.

  30. I have to admit that the idea of Christmas falling during the summer months does seem a bit strange. This drink sounds really yummy. Bet it would be tasty with some coconut as well!

  32. Caite! I love this! I'm going to serve this on Christmas in my house, using frozen mango and adding a bit of water as necessary. My husband is Filipino so his family will eat mango any time of the year! These cocktails will be perfect. :)

  34. ripe mangos have been hard to come by lately. the ones in the store are rock hard and leaving them on the counter to ripen has lead to rotting fruit at one end and hard at the other. oh bother. I Should be drinking while contemplating the fruit issue>
