Curried eggs




These curried eggs are a bit of Kiwiana.  I know many countries have devilled eggs but when I was a girl there wasn't a function that didn't feature a whole plate of them – usually much smoother and nicely piped than mine.  Rustic is in, I say.

You can also see that I had trouble peeling the eggs.  Anyone got a good tip for this?  And I only put the good ones in the photo!

So I boiled my eggs (see my post on how I do that), shelled them (badly) and scooped out the yolk.  I put it into a bowl with pepper, salt, a teaspoon of curry powder, some softened butter (in my case runny from being microwaved too long) and part of a finely chopped spring onion (scallion).  Then I spooned the mixture as carefully as I could back into the egg whites and garnished it with a little cayenne pepper and a couple of spring onion pieces.

This is good as a snack or as an accompaniment to a salad or smoked salmon.

  2. i made a lot of deviled eggs in july, 9 dozen to be exact. the runners at the race i volunteer at love them. I was told, that eggs that are older, will peel better than freshly bought eggs. When you are ready to fill your eggs, scoop the mixture into a sandwich size zip lock bag, snip the corner and then squeeze out to fill the hollow. you need a fair size hole, but don't make it too big. the hole should be about the size of your pinkie finger tip.

  5. I absolutely love curried eggs! My Mum makes them for every BBQ and party they have and they go down a treat :) I crack my eggs lightly with a teaspoon then peel them over the sink dipping them in a little bowl of water as I go to remove the little bits of shell and it all comes off perfectly. Yours look fine - they have character!

  10. I love deviled eggs but have never made them with curry! I always have trouble peeling eggs too. Last time I got so frustrated I almost threw one across the room. Supposedly fresh eggs are much harder to peel than older ones but eggs never seem to stay in our refrigerator long enough to not be fresh.

  12. I just tried smoked salmon with boiled eggs for the first time and feel in love! The curried eggs would be perfect with smoked salmon or just by themselves. So good!

    Thanks for stopping by my beet post. Some of the bunch beets are baby beets but most are medium sized (about 3 inches in diameter), straight from the field, with the greens still attached. They're called bunch beets because they're "bunched together" by binding the beet stems into a bundle.

    Beet greens are crazy good. I hope you get an opportunity to try them some time. :)
